Last month, Laitram Machinery hosted a Shrimp Cooking School in Guayaquil, Ecuador, for professionals in the shrimp industry.

The event featured Dr. Jason Bolton, Associate Dean, Extension Professor from the University of Maine, and Dr. Michael Ciaramella, New York SeaGrant Seafood Specialist.
The cooking school covered various topics, including new technologies, principles for thermal processing, food safety, FDA seafood HACCAP compliance, and sanitation best practices.
