Our experts recently visited an Indian shrimp processing facility that cooks a variety of products (HOSO, HLSO, PD, PTO, etc.) with Laitram's Coolsteam Cookers. To help them achieve peak performance, we conducted a multi-day cooker optimization and training session. This optimization service is provided through the Laitram Service Plan.
Here's what we do during this type of optimization visit:
The team analyzed multiple recipes for their different SKUs, including soaking, cooking, and chilling.
Deep Dive into Recipes: We analyzed the customer's entire process before and after cooking. Understand current recipes, examining soaking times, cooking durations, core temperatures, buyer validation process, and product specifications such as color and curl control.
Understand Process yield: Get to know the current process yield and focus on improving the process yield, not just the cooking yield lost/yield. Data traces/ trackers were used (to track temperature during the cooking and chilling process).
Tailored Training: Based on this analysis, we created a customized training program that addressed their specific needs. This included in-depth testing of various shrimp SKUs to identify the best cooker operation and maintenance practices.
Review the equivalent lethality method to calculate the process's killing effect (log cycle reduction) and compare it with the endpoint temperature method.
Confidence and Efficiency: By the end of the session, the customer's team felt confident in operating the cooker at peak efficiency. The team repeated tests with larger volumes to see if there were variations from smaller tests.
