    Layout Side Shrimp Peeling

    •  Pre-Cleaning: Washes HOSO raw material and removes solid contaminants (rocks, glass, shells, sand, etc.) using gravity and adjustable turbulent water flow.
      • Reduces equipment wear and maintenance and increases product quality.
       
    •  Feeding: Automatic infeed system gently delivers HOSO or HLSO shrimp evenly and consistently to keep multiple peeling lines operating at full capacity.
      • Automated batching with integrated weighing eliminates under- and over-feeding while tracking throughput and minimizing product damage.
       
    •  Peeling: Automatically peels bulk-fed HOSO or HLSO raw shrimp with consistent high throughput, quality and yield while eliminating peeling labor.

      • Cooking: The Laitram CoolSteam® Cooker is an innovative, versatile, fully-automatic cooking system that maximizes quality, yield and throughput of cooked seafood products. 
        • Achieves uniform cooking, decreases tail breakage, reduces energy costs, and simplifies and improves sanitization.
         
      • Chilling: The Laitram Rainfall Chiller System stops the cooking process when cooked product exits the CoolSteam® Cooker.  
        • Warm water counter-flow provides “Convective Chilling” to achieve a faster, more uniform cooling rate than a stationary ice-water mix.
